What you need:
- 3/4 kg. boneless, skinless chicken
- 1/2 cup maple syrup
- 1/2 cup Dijon mustard
- 2 tablespoons soy sauce (less sodium)
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt to taste
- Ground black pepper to taste

What you need:
- 3/4 ground chicken
- 1 kg. cloves garlic, minced
- 1 large onion, diced
- 2 cups shredded mozzarella
- 1 cup ketchup
- 1/3 cup brown sugar
- 2 tablespoons yellow mustard
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon chilli powder (optional)
- 2 teaspoons Worcestershire sauce
- Kosher salt and ground black pepper to taste
- 4 buns, for serving
Heat oil inside a large pan over medium heat then prepare onion until tender. Add garlic clove and prepare for one minute more. Stir in ground chicken and prepare for six more minutes, or until no more pink.
Add ketchup, brown sugar, mustard, chilli powder (if using) and Worcestershire sauce towards the pan. Season with pepper and salt. Stir ingredients until well-combined. Simmer for 5-10 minutes or until mixture is thick and saucy.
Top with mozzarella and put cover 2 minutes. Remove from heat and awesome for any couple of minutes. Serve on buns.
